Yes, many Fairmont hotels definitely go above and beyond in terms of offering of benefits:
- when a la carte breakfast is included, I often just order something I'd consider "reasonable" (e.g. main dish + side dish + hot beverage), and while the side dish may technically exceed the "allowance", more often than not the front desk has just deleted the total breakfast charge (and when not, I obviously don't complain)
- when staying alone, I sometimes ask what the allowance is for breakfast is and whether they mind my using it by myself
But since those aren't published policies - and the exceptions may vary based on front desk agent, guest's status and stay history, booking channel, agent's relationship with the hotel etc. - my recommendation tends to be "don't ask too many questions, expect what is published, and be happy if the hotel goes above and beyond".
