There is no guarantee the present segments will still be open later. And there is no guarantee the desired excursion segments will very become available.
Depending on your UA status booking now and adding the excursion segments later (if available) may incur a change fee. And if it does not become available, you may need to purchase separately.
Would wait only if you would not make the trip without the "free" excursion. Waiting rarely improvements the availability -- especially for a inflexible trip.
