When we flew ORD-CUN last Spring E+ was practically empty at T-24 check-in. They were moving people into E+ just before push back. Generally, leisure destinations rarely if ever fill much E+. You should be fine.

1) Waitlists are processed based on Premier status of the traveler, then fare class, then time of request. Thus, you will be ahead of any Silvers and General Members in your fare class.
2-3) Upgrade availability to SYD is rare so don't count on it. If you're flexible look for R space just on the LAX-SYD and SFO-SYD legs around the times you'd like to fly then book those flights and your connection over the phone. Otherwise, book now and hope for the best.
