Haven't seen any in-ears with dual wired/wireless functionality. Only seem to be available on over-the-ear models. May need to carry around 2 pairs of headphones.

As for wireless and IFE, you can use a bluetooth transmitter like this:

Biggest issue with these if watching a movie is that the sound is, IME, slightly delayed. This means that the audio and video are slightly out of sync, so it looks like bad dubbing. If this bothers you, then wired is the way to go. If it doesn't bother you, worth a try.
