I've noticed an informal version of this at some hotels within the last year.

I've also noticed some hotels offering a food and sometimes beverage amenity when the lounge is closed, although this is different from the F&B welcome amenity (pick one beverage from column A and one food offering from column B) that one can take in lieu of the current welcome amenity points.

Maybe World of Hyatt is encouraging these sorts of things on an unpublished basis rather than the formal welcome amenity choices and mandatory points for a closed lounge.
