Clearly you're not getting on without being able to eventually get a seat assigned. But I assume that the people looking at "Seats Remaining" in the app are (apart from intrepidly curious Flyertalkers) people who are on standby or hoping for a bump. Those who are confirmed but without a seat assigned will have absolute priority over any standbys and should assume that they will get onboard. Whereas standby's chances depend on whether confirmed pax > seats on plane, regardless of how many confirmed pax have seats assigned.
Double seat assignments do happen, as anybody who's had a red light and beep at the gate, or an awkward onboard realization knows.
