Optional: The "real" cocktail has muddled ginger in it.
Technically a penicillin has ginger sugar syrup rather than muddled ginger - you're not going to get the sharpness of the ginger from anything fresh or dried.

I'd be tempted to bring on board some Kings Ginger liquor, as with some lemon juice and something smokey you can effectively recreate the rest reasonably well. Alternatively, that Wheels Up kit looks helpful...
