Whilst "service charges" automatically added very rarely go to staff here, any additional tips you leave *in cash* normally would. Not all places charge the 10%, and in those places in my experience any cash tips always go to the staff.

And wait staff salaries here are around median income, at least for staff in places requiring some knowledge of English.
