Again, haven't traveled with my gear before, are you saying that some hotels/resorts won't let you bring your gear to the room and you must "check" them at the front desk?
Yes, in the past 5 years with multiple ski trips to Colorado and Utah each year, I have not been allowed to keep my skis in my room. In fact I had hotel security show up at my room at the DoubleTree in Breckinridge, CO after a housekeeping person reported that I had a pair of skis in my room. They don't want the rooms to be damaged from the skis or snowboards.

If it's a hotel, I think you will be forced to use the ski valet. If you are in a condo, you might get away with skis in your condo.

My big question is do you think something that claims it can fit 2 snowboards, would it be big enough to fit 1 snowboard + 1 skies (likely in their own soft/hard case since it won't stack well on top of the board)? From the website it says it can fit 1 board+skies, but specifically I'm wondering if it will work with the skies in their own smaller case.
I don't know if that case will work with another case around your skis. I have the sportube for a single pair, and for 2 pair. The single pair is easy to use the double pair, I have to pack differently, and I couldn't put those skis in a normal ski bag and then in the case. I do wrap them in plastic sheeting before I pack them though.

This page might offer you some insights or packing help:
