I just got back from Hyatt Aruba. The beach is a bit crowded, but the Hyatt is definitely located on the best section by far. You can reserve a cabana for free using an app. The weather was amazing and the island was extremely safe. Unless you only eat at the resort itself food isn't too expensive, there are tons of extremely affordable options within a few minutes walk of the resort. The Pelican nest grille was my fav cheap spot to grab lunch or dinner.
Something to also consider is that the Hyatt Regency Aruba can be booked with points / free night certs fairly easily. This is in stark contrast to the Hyatt all inclusive properties. You can't easily find availability and have to actually speak to a Hyatt representative to search for available dates. I doubt you'll actually be able to string 7 nights together just on points. You may have to pay for a few nights out of pocket which could end up being very expensive.
