If she not too strict, I would pre-order the main course that most corresponds to avoid high gluten ingredients. I find most of the dishes except pasta are okay in this regard.
Unfortunately she does have coeliac disease, and is quite sensitive. We've flown F and J before, and she has been presented with a standard GF SPML, which can be bland as you say. Also a bread roll you could put through a window! Once she had the same fruit salad for starter and dessert ! It's most disappointing when the "normal" meals are most likely gluten free, such as a red thai curry, and also if I'm having alleged fine dining. I seem to recall that youfirst can tell us the list of allergens if we pre-order, which we will probably do.
She does tend to take some snacks with her, and we can eat in the CCR before hand too. It's an evening flight, around 20:30. But it's our first BA First, so wanted to make the most of it. Also a milestone birthday treat for her ; )
