Where are you based? How far are you willing to fly and/or how much are you willing to spend on it? (Does it make a difference where in Mexico/Caribbean you go?)
Do you have any Hyatt status? (Diamond status gets lounge and/or breakfast, which can go a long way at a nice place, such as Park Hyatt St Kitts)
Do you care if there are kids around? (Zilara Jamaica while being adults only shares the same property with Ziva, which is family oriented)

In addition to Ziva/Zilara, there definitely some nice beachfront properties to consider.
* Park Hyatt St Kitts - Should be very nice high end hotel. But definitely not all inclusive.
* Hyatt Regency Aruba has a very nice beachfront location. 25K points/night.
* Hyatt Regency Coconut Point (near Fort Myers, FL) has a boat shuttle to their own private beach. Plus it's only 15K points/night.
* There are a number of other places on the beach in Florida
Personally, I've stayed at Zilara Cancun and had a great time. I'll be going to both Ziva and Zilara Cancun again next month. It's not cheap, but I love that it's all inclusive and the food is pretty good.
