Speaking of Fois Gras, my wife and I just spent a wonderful evening at Trio in Evanston celebrating our 12th wedding anniversary. Enjoyed the Tour de Force 16 courses w/wine pairings, a 4.5 hour meal. I’ll write up sometime in the Chicago forum.

Anywho, the presentation at Trio was the following: Moulard Duck Foie Gras w/blueberries, cinnamon tapioca, sorrel.

The presentation was served in a clear glass tube. The mousse of foie gras “plugged” one end, the cinnamon tapioca the other.

We lifted/tilted the tube, put one end to our mouth and then sucked the whole tube’s worth into our mouth.

Silky, luxurious foie gras mousse w/the other components.

Wow! Terrific!
Congratulations, Willie! However, I can't believe that this wasn't posted first as a mini Chicago do!

BTW, going to Paris in June for the French Open. I could make a "run" to Fauchon!
