To be honest, I don't have any secret on how to find these sweetspots. I just read travel blogs, that's how I learned about INNSIDE NoMad. Also I check various property and see what rates they have in points.

Another one of my favorite redemption sweetspots is Melia La Defence in Paris: by using 2,000 points and cash, you can get a room for around 70 euros per night, which is a very decent price for a new 4* hotel in Paris. If you have 20% off codes, you can bring the price down even further.
In general, I always compare price in cash and in points. Currently you can buy points: 5 EUR for 1,000 (until 31st of March 2017). By converting price of a room in points into cash, you can compare and see for yourself what is best. Sometimes price in cash is cheaper than price in points.
