Just be careful here. My wife and I went in September as soon as flights opened up to Cuba. We went through MIA on American (Alaska didn't have flights to Cuba yet). At the time we traveled to Cuba, definitions of what was considered people to people education were sparse. In October, the US government fleshed out that definition so there is less wiggle room.

Are they going to prosecute anyone? Not likely. Just know there is at least some risk if you don't fit nicely into one of those categories and how the US gov. defines them.
When we went, we didn't do anything on the beach. We stayed at Casa's (rooms for rent in Cuban people's homes), visited historic sites, walked all over Havana, did some hikes near Trinidad, took the electric Hershey (as in the chocolate) train from Matanzas to Havana, and really just spend our time taking in the culture. I'd encourage most to stay in Casas (for the experience and to save money), speak with the people, travel around on foot or taxi, and not spend time on a beach.
