Just like when you check in, you always deal with the operating carrier.

(Given the nature of AF, KL, and Delta's relationship, you will find anyway that there are no AF staff and no DL staff* at AMS - they are both represented/handled by KLM)

*unless you are travelling on a DL staff ticket.
