I know places like the DT Glasgow and Dunblane Hydro have their own menu. As do Glasgow Grosvenor and Hilton Coylymbridge, so hopefully its spread may be limited!
Yeah there appears to be plenty on the menu but it's not exactly appealing imo.

Glasgow Grosvenor is bovine and attracts a good bit of passing trade so can't see it changing, Dunblane is celebrity branded as well so those should be fine, it's the ones with no "Name" to them that appear to be getting this. Aviemore they would be bonkers to change imo.

Re Glasgow Grosvenor if you are visiting and staying midweek and have someone with you there are a couple of good offers on the Hilton gift vouchers page that are well priced. If you argue the point over the vouchers you can get points but it's tedious.
