Slightly off-top but related to the final sentence. I had a 10% service charge for going down to the hotel bar for a pot of tea at the Hilton London Bridge a couple of weeks back. It was only 40p - I did not know it was discretionary, as all I saw was the receipt (didn't look at the menu).
When the bill arrived tonight (with 8.5% already added) there was even a line where you sign marked "tip"
Interesting that although I was in early (18:00) I was the only Customer until 19:00 when a couple arrived. When I left they were on their own and the staff were setting the tables with breakfast items. Seems that at 19:00 they weren't expecting to get any customers in apart from about 5 tables left set up for dinner!
