Anyone else noticed a creeping standardisation of restaurant menus in U.K. Hilton's?

Noticed an identikit menu being introduced in Edinburgh Grosvenor and Sheffield and a few others.

Seems to mean a reduced choice and increased prices. I also noticed tonight that "a discretionary 8.5% service charge will be added to your bill" is tucked away at the bottom amongst the blurb.
