Of course the plane will not fly the exact shortest route and will turn before landing, but its exact route depends on prevailing winds and ATC and so forth. And when the plane is close to KTM, the peak is still over a hundred miles away...
The typical flight path is under Nepal and a sharp turn left on approach. So the Himalayas (and Mt Everest) can only be seen from the left until the final descent - at which time it will be on the right (as you correctly mention) but your chances of seeing it are not great at that time as you are well below the top of the mountain and typically cloud cover.
