In principle, there's nothing wrong with this idea.
I think that the main thing to watch out for is the routing limitation on open jaw award tickets. My recollection of the rule is that the surface sector must be shorter than either of the flown sectors - but hopefully someone will confirm whether this rule is still in place or whether it's been modified in some way.
This also assumes that your 2-4-1 vouchers come from the Premium Plus Amex, because they're the ones which allow the use of two at the same time to fly four people.
