Not sure why not serving pork products at breakfast would denigrate this hotel to a "fake nice" hotel. There are plenty of non pork equivalents (eg. turkey ham, chicken sausages) that are more than sufficient for breakfast. And this isn't just the practice of GH but many of the "real nice" hotels in Singapore.
