Just returned from a week in Cuba. Casa particulares are definitely the way to go. Much nicer and better service than in the hotels -- the latter are all state-run, but the former are private businesses. Casas have better food, too, and the owners can help with other bookings and whatnot. Plus, they cost a fraction of the price.
