Over many years (dating back to 1986 ....), have encountered lots of nationalities - mostly the 'usual' which have been referenced here already.

In the early days, there was a noticeably high percentage from Philippines, India and Britain & Ireland (similar pattern to Gulf Air really) ; but as we all know, this soon began to widen considerably in line with EK's aggressive expansion of both fleet & network.

My own standout rarities in recent times are :

Bonaire : believed to be the one & only Emirates 'representative' from the island

Austria : obviously not an unusual country per se, but apparently a rarity within EK

Zimbabwe : she was Purser on a BKK-SYD where I happened to be the only pax in F

All three were particularly charming, personable and were (IMHO) fine ambassadors for the airline. I still remember their names.

I also recall a very helpful (and amusing) CC member who was part Iranian and part British.
