The checked luggage bit (somehow I thought you were carry on only) would flip it for me. You're just about guaranteed 20 minutes from the time the plane docks until any bags start to show. Then you have to recheck them after customs. The shorter connection time would basically be implausible, but worse you'd have a fairly decent chance of not being on the same plane as your bags (either they get on the earlier one while you miss it, or vice versa), increasing the hassle upon arrival at SEA.

Take the longer connection, and enjoy the SkyClub (and outdoor deck at T4) or grab a Shake Shack burger or something, while marveling that you were just in an awesome city that morning, you'll be home (presumably) that evening, and three hours is nothing compared to the weeks that journey used to take.
