Easy aircraft have two lavs, one at the front and one at the back. One toilet for all of economy still isn't great, and it only takes one person with some longer need for relief to cause a backlog which could be relieved by a second toilet.

I'll stop now before I start sounding like I'm auditioning for a Carry On... film.
