If you ignore the London flights, it is very rare to see male flight attendants on JAL and ANA. I don't see that as a problem, also not in relation to handling a case like this one. It is a matter of training, and being able to step in the right way early. KE demonstrated quite clearly that they did not have the training, and just handing out free'er reins to use a taser is probably not the first step to be taken.
I have not been anywhere close to this level of situation, though Russian travellers with their own vodka in full size bottles in tow on DME-NRT has been handled fairly well by JAL in my experience, so I am not really worried about a situation such as this on JAL.
What is different about the London flight? They actually require male crew? Also, on KE flight, I read the guy has only 2 shots of liquor before the mayhem happened. With elevations and individual tolerance level, I think some passengers can act up with just one drink.
