On shorter service flights out of DXB, the mezze components (hummus, moutabel, muhammara) are pre-plated into tiny ramekins and chilled until they're dried out. On longer flights it's plated from a larger sealed container (I think?) and much fresher and something to look fowrard to.
Not sure if 5h40 minutes counts as a shorter flight, but I'd get the mezze on the long haul and go for something with more moisture on the shorter flight.
