Quito: fine, no problems.

Galapagos: Ha! Tiny bit of service at the airport and maybe one other island (Santa Cruz?) and then totally, 100% dead everywhere else. But that was the same for everyone else on our ship, no matter the carrier.
Unless things have changed since my post, manually switch to Claro for decent speed and service while in Santa Cruz.
