On UK site I can modify the "main contact" traveler name and then it offers a separate section for Passenger Information for hotel arrangements and again I can input whoever I wish to. As I mentioned up-thread, the only field that is grayed out is the payment info/cc. But as long as its not a prepaid reservation you can pay with another Amex at the hotel at checkout.
Interestingly, I can change the payment info to choose any other (amex) card linked to my online account.
