Kai at the Sheraton just south of Phoenix is probably the best restaurant you'll find in any hotel in the mainline Sheraton/Westin/Marriott/Renaissance strata. I've eaten there three times and every time I do I'm absolutely shocked I'm in a Sheraton. Starwood presumably has their reasons...if the individual brands have a "flagship" hotel, that's probably it for Sheraton - at least in North America.
The Dining Room at the Ritz in SF was always top-notch, although I haven't been there in recent years and have heard they've completely changed it over to a new concept (what, I'm not sure).
While regular Marriotts tend to be middle-of-the-road foodwise, I do like the fact that most of them get the late-night burger right. Plus they're almost always willing to serve it at the lobby bar. Since my likeliest time to order said burger is on a late-night solo arrival, this is important to me.
Renaissances usually try to do more of a modern/upscale cocktail/dining atmosphere. Some pull it off relatively well, although I can't think of any that approach the Michelin or 4/5-star Forbes level.
