Having read the menu, I guess I would know what the "chicken" and the "fish" are. I think it's definitely more important on the flights without menus. Ask me if I want "the chicken" or the "vegetarian" LAX-OGG, I'm gonna ask 1) "how the chicken is prepared and what comes with it?" and 2) "What is the vegetarian choice?". Ask me if I want "The chicken" or the "fish" on a flight with a menu, I'll already know my answer.
If you go to a restaurant, do you expect the waiter to fully recite all the menu choices/preparations even though they're on the menu? The only thing I would expect to hear are the off-menu selections.
