Local HK Foodies with roots do not use Yat Lok and Siu Yuk in the same sentence. Roast goose when I am hungry in Central, yes.
Kam's in Wan Chai is a better combo of great roast goose and siu yuk at the time when it comes out of the BBQ.
Cantonese BBQ is a case of impeccable timing (出爐/out of the oven)
