"Polaris" is going to be a step backwards for any future UA traveler on new Polaris configured AC, if the bulk of their flying on UA was in GF. DL tried convincing its intl FC pax that their new "Business Elite" was going to be just as good...and it didn't work for them either.
It will be tray service along the lines of current 3-cabin BF with appetizer/salad on one tray. The formal, drawn-out service is nice, but when the actual food served is of lower quality and the menus are virtually unchanged for nearly a decade, I'm on board for something different.
