So on a recent flight in Global First from SFO- HKG the purser ( a 22 year UA veteran) explained that the inflight dining experience with Polaris will be a "tray service" vs a course by course service. The food service in the lounges will offer complete sit down meals, however the tray service was decided (per him) based on the surveys of several thousand elite flyers who rather have more time to sleep on flights. I hope that isn't true, cause that would be a step backwards for United.
