Most of the conversation centered on the market so I'll backtrack to this query.

The convenience of hopping onto the train from the airport is worth the additional $20, and I'm not sure if that takes into account the nickel and diming FD works into their fares. I'd personally avoid FD, but that's based upon some problems I've had in the past.

DMK has immigration and taxi issues. The bus to Mo Chit BTS/MTR is a good option though. However the ARL from BKK is very easy and convenient.

For close street food you might want to have a look along Petchaburi just west of Phaya Thai Rd. It's not a cart style but lots of streetside restos that are often full. There's also a side soi with additional food but I've yet to explore that particular area.

Keep in mind that Mondays tend to have limited options.
