But in my experience, if in a like for like POS and itinerary and any minimum stay is preserved and there is say a T class fare on Tuesday and I wish to change to say Wednesday I have never been told that T on Wednesday has multiple T's. If you call them, someone verifies the availability for changes, but they have no idea of the price and then they transfer you to the "cashier", but you cannot contact the cashier first, who seemingly is the only crucial part of the process.
I've spent hours and hours on the phone holding while the first line of defense LH, UA, DL or AA agents gets my flight info and then call the rate desk to price out changes. Also, seen plenty of day of the week restriction for other carrier fares - sometimes though they're in the fare rules only listed as extra surcharges, so less issues then finding a completely new fare.

Lack I suspect you are more familiar with LO than I, nevertheless I think there is a very peculiar style of revenue management. In true FT style I have monitored flights I have been booked on to see for example Y and B only for sale and then suddenly U and T fares being opened in very close to departure. Flight goes out relatively empty. I have back office information to look at the actual loads and compare.
I don't have back office information on this, but I've seen plenty LO flights I was looking into go from available for cheap to not and back again. No idea what's their logic (for example I know that LH can have a seemingly oversold flight wide opened in all classes and then it just pushes higher fares for certain POS, UA might have a flight zeroed out at T-25 but then next hour it starts to open up so people can make same day changes etc but I see no clear pattern with LO).
