The article cited the 'not the most authentic' for one particular restaurant, the one at Thewet Pier, without elaborating on exactly why.
I'd say any foods which don't include normal ingredients (no chilis in expectation for foreign diners, no
bai makut etc) or fusion would pull the food away from 'authentic'. Would you say a dish like
nam dok would be authentic in the absence of
khao kua?
