In general, there are 2 "cabin/class" options on Aeroplan's site
1. Economy/Premium Economy
2. Business/First Class

Also just using some AC flights/destinations as an example, AC is using the 788 to GRU, which has a Premium Economy cabin. But BOG is on Rouge on a 763, which does not. EZE/SCL is on a 77W which has the cabin.

As for Avianca etc, others here who fly to South America are best qualified to help. Perhaps a good research step would be to view the paid sites for the airlines and routes you want to fly and see which aircraft and cabins are available.

A quick check on Aeroplan and you can see both the Economy and Premium Economy are showing to GRU.
