This is a critical point for the benefit of others. Many insurance policies have strict claims deadlines. They may also have "notice" deadlines which precede a formal claim. If you miss a deadline, your claim may be denied outright.
Check your policy in advance. It may well be a good deal more generous both in terms of the limits it pays above what the carrier is required to pay and in terms of the practical aspects of collecting against the policy.
My experience is that the insurance company will be flexible as airlines tend not to respect the 21-day limit that much.
