Nok Air doesn't (generally) weigh carry ons, so unless you're trying to get something obviously too large onboard then you'll be fine. I've heard (but not personally flown) Air Asia doesn't actually check either.
The 7kg rule is typical in much of the world, but I've only run into a small number of places where it's actually checked.
One thing I've heard of people doing before with camera gear is a vest with a lot of pockets for lenses, etc. if the airline you're going to be on is a stickler about the bag weight. One time on ET out of BKK, my carry on was overweight and they were checking everyone gateside. So I took out a bunch of stuff, threw it over my shoulder and said "there, the bag is under 7kg now"... he was satisfied enough, I walked 20 meters ahead and put it all back inside.
Yeah I guess I can carry more on myself... might be a bit difficult in thailand specifically where it'll be too hot for something like a jacket with big pockets!
