Like most airlines, it's unlikely you'll receive credit unless you check-in.
As for Air NZ specific examples, I've bought a couple round trip tickets on them where I've not flown the return. [Since buying a return ticket was cheaper than the one way I wanted]
I provided my UA number when buying those NZ tickets and I received mileage/point credit for the outbound flights, but not for the unflown returns.
As for your promo persuit, perhaps Air New Zealand could offer virtual flights for people who want to give them real money for points/promo qualifications but not fly. Think of the margins!
