it is to be able to completely change the ticket without losing the companion code
if you don't book a refundable ticket, my understanding is you can only change the dates, not the origin/destination. if you book a refundable ticket, you can change both and then get a refund for the fare difference when you settle on the actual itinerary you want to fly.
i may be misunderstanding but i think this is how it works
