Because airlines do have the liability to seat children next to their parent. Even a domestic airline, like Southwest, who has open seating policy will ensure kids get their seats next only to parent. Most of the airlines already do honor this system. EK is one of the first airlines who is not doing that, surprisingly!
Your child will not be be allowed to be separated from you. If 2 seats cannot be found together, the I'd guess you would be offloaded and put on another flight.
