We're flying into JFK at around 11pm and then our next flight out is at 8am. We're not wanting to leave the airport to go to a hotel, if that's possible.

There are no hotels in any of the terminals, or connected to any of the terminals at JFK. All hotels are outside the airport/terminal and you will need to take a hotel shuttle. Most of the major chains have a JFK property.
