It makes perfect sense that an FA giving the safety demonstration would not actually inflate a life vest or pull an oxygen mask from the overhead, but why not show the real thing in a safety video? How about showing how to use the slide, or get off the wing from an overwing emergency exit? So many people are injured using emergency exits after an otherwise perfectly safe emergency landing, you would think the lawyers would have coerced a change by now.
(More likely...the lawyers have coerced the status quo, and showing any useful safety info in the pre-flight video would somehow expose an airline to additional liability.)
On an old TWA 747 video I recall they showed the operation of the slide.Also if you search for Flight Attendant training videos on YouTube you will see everything from door operation to oxygen masks.In this Flight Attendant Training Video they do speak about "pulling the two plastic straps pulling the pin to start the flow of oxygen" under the Oxygen Mask Procedure section as the OP points out.
