I think anyone who even tries to mention "wastage" in this situations, whether as a explanation or an excuse is living in a world of fantasy and giving false credence to it being somewhat of a green or ecological decision. The throwing out of excess food, whilst on the face of it is bad, happens in every food establishment and most houses around the world.

This is fine slicing of margins to gain an extra few pence here and there. Let's call a spade a spade.
