From my experience, much of the advice you're seeing here is useless. The spread I linked to is from the Century Hotel Matsushima. Not as extensive as other restaurant buffets but less options here meant higher quality.
Not all nori is equal, there are some nasty sheets sold abroad. Once you can get hold of the good stuff,you could try crumbling it onto popcorn (we like it with a little salt and a vague drizzle of honey) or find nori flavoured potato chips. Your kid might get a taste for it after all.
Could not agree more with this.

Sushi Bar Yasuda was good with our then 7 year old. Who knew she would love tuna Maki rolls so much. The most expensive ones I've paid for but she wolfed them down like they were cookies.
