I was able to book a Hyatt House in Santa Clara for 8,000 points, and because it was over Labor Day weekend, it would have cost $356+ tax for that night. There were no cheap hotels that weekend, and we had to be there for a family thing.

That was a good value for my 8,000 UR points. I have the Hyatt card as well. Occasionally, you get a great value with those Hyatt points.

I transferred 90K Starpoints to Marriott for 270,000 points. I have been trying to figure out how to use those points. I may transfer back and transfer them somewhere. Marriott seems a dead end. I haven't done much with Marriott at all.
Look at the Travel Package Marriott has. If you are not familiar with such, you should be able to find lots and lots of blogs on the "sweet spots" created by the SPG to Marriott 1 to 3 as you have already done so. There are more than enough to detail out both the math and which airlines would work best for individual needs - of course it also largely depending on whether your travel is primarily domestic or international.

Hyatt pts better earned via UR channel than from the card itself unless you need that Diamond status and need the supplement from nights earned via spend. Does not seem to be your case though.
