Thanks for responding. I have sent our hotel concierge no less than 6 Michelin restaurant requests and they were able to secure spots at all 6 - we are obviously not going to all 6. It seems that many of the better restaurants hold seats for top concierges who deal with international travel.

We are going to Sushi Yuu for sushi - that is decided - and are holding 3 other reservations - one French, one kaseki, and one seafood focused - not sure yet which we will choose.

Our other two meals will be with friends who live in Tokyo - one focused on Wagyu and the other on tempura. They will be choosing. One is a local chef so I am sure it will be good.
